Thai Fried Rice with Prawn

First part:

  1. Soak 2 cup basmati rice in water for 10 mins. 

  2. Cook the soaked basmati rice according to packet instructions (usually its 2 cup water for 1 cup rice). Add salt to taste and 1 tbsp oil to the boiling water. 

Second part

  1. Heat 2 tbsp olive oil. Medium flame.

  2. Add 2 finely chopped garlic and 1 finely chopped onion. Saute until translucent.

  3. Add ½ kg prawn, 1 tsp chilli flake, 1 tbsp soy sauce, salt to taste, ½ tsp pepper and saute.

  4. Move this mixture to the side of the pot and crack 2 eggs and scramble it.

  5. Add 1 tbsp butter and add cooked basmati rice.

  6. Garnish with spring onions. Fish sauce can be used (optional).
