Vegetable Masala Pulao
Easy one pot rice dish cooked with long-grain basmati rice, spices and vegetables.
A flavoured and fragrant vegetarian dish that needs no other side dishes. Best for lazy days when you have nothing in your fridge!

Wash 2 cup basmati rice and soak in water for 10 mins. Keep aside.

Heat 2 tbsp oil and 1 tbsp ghee. Medium flame.

Add 2 bay leaves and crackle the spices - 2 cinnamon, 4 cloves, 4 cardamom, 2 star anise and ½ tsp cumin seed.

Add 2 thinly sliced onion and saute until just brown.Â

Add 2 green chilli, 1 tbsp ginger & garlic paste, 2 chopped tomato, ½ tsp turmeric powder and salt. Saute until tomato softens.Â

Add 1 chopped potato and ½ cup each vegetables of your choice. Add 1 tsp chilli powder, 1 tsp coriander powder, 1 tsp garam masala powder and few herbs of your choice (mint/coriander/curry leaves). Sauté for few minutes or until aromatic.Â

Add 4 cups of boiled water.

Add 2 cups of soaked basmati rice, ½ tsp lemon juice and 1 cube vegetable stock.

Cooking Method Time:
- Pressure cooker - Medium flame until 1 whistle
- Slow cooker - 10 mins
- Normal cooking pot - 30mins
