Okra (Bhindi) Bell Pepper Masala
Okra is known as Lady's Fingers or Bhindi in India. Okra masala is a common Indian side dish made with okra, bell pepper, spices, herbs, onions & tomatoes.

Chop ½ kg okra into long slices or round pieces.

Chop 1 bell pepper into cubes (optional).

Heat 4 tbsp oil. Medium flame.

Shallow fry the okra until the stickiness disappears (5-10 mins) and keep aside. Shallow fry the cubed bell pepper for 5 mins and keep aside.

Remaining oil, add ½ tsp mustard, 1 tsp cumin and saute until it crackles.

Add 2 finely sliced medium onion. Sauté until translucent.

Add 1 tsp garlic & ginger paste. Sauté for a minute.

Add 2 medium tomato and salt. Sauté until tomato softens.

Add ½ tsp turmeric powder, 1 tsp chilli powder, 1 tsp coriander powder, 1 tsp garam masala powder, ½ tsp kasuri methi. Sauté until aromatic.

Add little water and sauté for a minute.

Add fried okra and bell pepper. Sauté for a minute.

Garnish with coriander leaves and sesame seed (optional).
