Potato Masala Bonda

First part - To make the potato masala

  1. Boil 2 medium potato and 1 small carrot in water with salt to taste. 10-15mins. Drain water. Mash boiled potato and carrot. Keep aside.

  2. Heat 4 tbsp oil. Medium flame.

  3. Add ½ tsp mustard seed, ½ tsp urad dal, ½ tsp cumin seed and saute until it crackles.

  4. Add 2 finely chopped medium onion, 2 finely chopped green chilli, 1 finely chopped small ginger, few curry leaves and saute until onion is translucent.

  5. Add ½ cup frozen pea, 1 chopped small tomato, salt to taste, ½ tsp turmeric powder and saute until tomato softens. Add mashed potato & carrot, few coriander leaves. Keep aside to cool. Make 10-12 medium sized balls with this mixture.

Second part - To make the batter

  1. In a bowl, mix 1 cup gram flour, 1 tbsp rice powder, 1 cup flour, salt to taste, ½ tsp turmeric powder, ½ tsp chilli powder, ¼ tsp baking powder, 2 tbsp oil, 2 tbsp yoghurt and 1 tsp lemon juice.  Add little water until the batter is not too thick or too thin - a consistency that's enough to coat the potato balls without dripping.

  2. Coat the potato balls in the batter and deep fry until golden brown.
