First part - To make the tart dough and refrigerate for one hour

  1. Mix 120g cubed cold butter, 70g icing sugar in a food processor or dough maker.

  2. Add 1 egg white and 170g all purpose flour. Let it mix thoroughly until it forms a dough. (Can use hands to mix too)

  3. Cover the dough in cling film. Keep in fridge for 1 hour.

Second part : Prepare the tart

  1. Preheat oven 180° C for 10 mins.

  2. Take the chilled dough and roll it into ½ inch thickness. Place into an 18-inch tart baking tin.

  3. Poke multiple holes in the tart using a fork.
  4. Bake 180° C for 20 mins. Rest for 10 mins.

Step 3 - Tart filling

  1. Mix 250g mascarpone cheese, 70g sugar powder and 20g corn flour using hand beater or electric mixture.

  2. Add 1 egg and 1 egg yolk

  3. Add 30g melted butter

  4. Pour this mixture on top of the baked tart.
  5. Add few chopped peeled plum or pear. Sprinkle 1 tbsp sugar on this. 

  6. Bake 180° c for 50 mins.

  7. Decorate with apricot jam (add few water to the jam and boil)
  8. Apply thin coat of apricot jam and icing sugar (optional).
