Egg Bhurji
An Indian scrambled egg dish made with eggs, spices and herbs. Perfect with bread, Khubz(arabic flat bread) or pita bread. Serve with yoghurt (or labneh) on the side for a quick breakfast.

Heat 4 tbsp oil, medium flame.

Add ½ tsp cumin and 2 finely sliced onion. Saute until translucent.

Add 2 green chilli, 1 tsp ginger & garlic paste and few curry leaves. Saute for a minute.Â

Add 2 chopped tomato and salt. Saute until it softens. Add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder and ½ tsp garam masala powder. Saute until aromatic.

Crack 4-6 eggs into this mixture and quickly whisk. Saute until dry.Â

Garnish with coriander leaves.
