An Indian scrambled egg dish made with eggs, spices and herbs. Perfect with bread, Khubz(arabic flat bread) or pita bread. Serve with yoghurt (or labneh) on the side for a quick breakfast.
Heat 4 tbsp oil, medium flame.
Add ½ tsp cumin and 2 finely sliced onion. Saute until translucent.
Add 2 green chilli, 1 tsp ginger & garlic paste and few curry leaves. Saute for a minute.
Add 2 chopped tomato and salt. Saute until it softens. Add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder and ½ tsp garam masala powder. Saute until aromatic.
Crack 4-6 eggs into this mixture and quickly whisk. Saute until dry.
Garnish with coriander leaves.
