Homemade pita bread stuffed with chicken, bell pepper, onions and spices.
Mix 2 cup flour, 25 g butter, 2 tsp yeast, 2 tsp sugar, salt to taste, ½ cup whole milk, 1 egg (optional), ½ tsp oregano or thyme with little water to form a dough. Coat the dough with 1 tbsp oil and keep aside to double rise (1-2 hrs).
In a bowl mix ½ kg cubed chicken breast, ½ tsp garlic powder, salt to taste ,½ tsp black pepper powder and ½ tsp chilli powder. Heat 2 tbsp oil and saute the chicken mix until its cooked. 15-20 mins. Shred in a grinder or food processor. Keep aside.
In a cooking pan, heat 2 tbsp oil. Add 1 finely chopped medium onion, 1 grated small carrot, 1 finely chopped green bell pepper and saute until onion is translucent. Add 1 tsp garam masala, 1 tsp chilli flake, ½ tsp black pepper powder and saute for few minutes. Add shredded chicken and saute until aromatic. Switch the heat off. Add 2 tbsp mayonnaise and mix well.
