A quick and super crunchy samosa recipe made with chicken, onions, vegetables and spices. An easy way to get your kids to eat some veggies with chicken!
Keep aside 1 pack frozen samosa sheet to thaw in room temperature.
In a cooking pot, bring water to boil. Add ½ kg chicken breast, salt to taste and ½ tsp turmeric powder. Cook for 15-20 mins. Keep aside.
Crush in a food processor - 1 medium ginger, 4-5 garlic clove, 2 green chilli, few curry leaves and then add boiled chicken and crush again all together.
In a cooking pan, heat 4 tbsp oil. Medium flame
Add ½ tsp fennel seed and saute until it crackles.
Add 1 finely chopped medium onion and saute until translucent.
Add shredded chicken mix, saute until aromatic.
Add ½ tsp turmeric powder, 1 tsp garam masala powder, ½ tsp chilli powder. Saute for a minute.
Add vegetables of your choice - ½ cup each - carrot, frozen peas, beans, sweetcorn. Saute for 5 mins.
Add 1 chopped big onion and ¼ cabbage and few coriander leaves. Saute for few minutes in high heat. The onion and cabbage should be crunchy.
Fill 2-3 tbsp of chicken vegetable mixture into each samosa sheet. Secure the sides with little flour paste. Deep fry until golden brown.
